It’s been a long time since I’ve made one : a berry Pavlova. If you’ve been following the blog for a long time, you might know this is my favorite dessert ! It’s THE dessert I can’t resist : it’s light on the palate, with lots of different textures and above all it’s fresh. When the pavlova arrives at the table, usually everyone is impressed and then it is your turn to give it a try !

Berry Pavlova : the recipe

If you are new to pavlova : its exterior must be crisp and its interior soft. It is traditionally decorated with whipped cream and sweet and/or sour fruits: red fruits, passion fruits, pineapple, slices of peaches, etc.

With the quantity of this recipe, I made a large pavlova in the shape of a crescent Moon and another individual. I was unfortunately not able to take pictures of everything because it was devoured faster than expected but here is a preview !

Ingredients

For the meringue

4 egg whites

200g sugar

1 teaspoon of white vinegar

1 tablespoon of cornstarch

For the whipped cream

20cl of whole fat liquid cream

50g sugar

For topping

1 pack of raspberries

1 pack of blueberries

Some pineapple

4 tablespoons of raspberry coulis

Preheat the oven to 120°C.

Whip the egg whites with the vinegar. When they start to rise, add the cornstarch, then the sugar little by little. The mixture should be very shiny and the consistency should be like a bird peak.

Spread the preparation on a silicone cloth or baking paper placed on a baking sheet. You can shape your meringue in different ways, do not hesitate to use a spoon or spatula to create volutes or small peaks to give this impression of a nest. Bake for 1h15.

NB : you can do the meringue step the day before. You can also already put your bowl and whisk in the freezer to prepare the whipped cream the next day.

Just before serving : Whip your cream until it forms a whipped cream. Once it’s partially whipped, sweeten it.

Wash the fruits, cut them into pieces.

Spread the whipped cream on the meringue disc, distribute the fruit harmoniously (be generous !) and possibly serve with a raspberry coulis (which you can make yourself very quickly : frozen fruit, a little water and a little sugar, you mix and voila !
