The French Bastards : the bakery

The French Bastards bakery opened early 2019 in the 11th district of Paris with the aim of offering homemade products, sprinkled with tradition in an ultra cool pop atmosphere ! The objective is to propose good and beautiful !

The creators of this bakery : 3 guys out of business schools and CAP bakery : Julien Abourmand, David Abehsera and Emmanuel Gunther. This trio has a real vision of the author’s bakery, starting with the creation of a range of rustic breads that includes organic flour sourcing or reasoned culture, a long fermentation, natural yeast.

To prepare their breads, the “Bastards” use bold mixes : rye, hazelnut, white quinoa, corn or black bean flour. You can find country breads with hazelnuts and orange peel, cranberry walnut, pecans…The originality is there to awaken our taste buds and carry us in an almost childhood delicacy.

The pastries will make turn your head and drool your instafriends #foodporn ! The classics are highlighted with chocolate bread, Isigny butter croissant, lemon bichon or raisin roll, not to mention the magnificent marbled, lemon or chocolate cakes.

The trio give homage to their origins, like the “bakba“, this famous Ashkenazi brioche braided with chocolate.

Other products are inspired by American pastries such as cinnamon roll, cookies or their famous cruffin, a crazy invention : a croissant dough cooked in a muffin mold and stuffed with caramel, raspberry coulis, etc. This pastry is often revived to offer us a new parfum.

Moulaye Fanny, passionate pastry chef

Moulaye Fanny is an autodidact in the pastry world. Originally a railway engineer, this pastry enthusiast is an epicurean, combining a “laser” technique as he likes to call it and the search for pleasure through taste. Moulaye also pays homage to its Ivorian origins by incorporating flavors and references in the name of his creations.

I personally discovered him on Instagram where his account makes me dream. You can find it on his site Sweet and Treat or its social networks.

The French Bastards x Moulaye Fanny

Announced on social medias, the collaboration between The French Bastards and Moulaye Fanny has been answered by gourmands.

On this occasion, Moulaye proposes two capsule creations mixing his universe with the one of the “Bastards”. The launch took place last weekend (on the 21 and 22 September) and you can still enjoy these creations this weekend : on the 27 and 28 September !

You will find :

  • the buckwheat lemon roll (€ 2.80) : a generous pastry with a almond lemon fondant and crisp buckwheat seeds. The dough is incredible !
  • the black & Yellow tart (5,80 €) : vegetable charcoal pie shell, coconut dacquoise, sumac mango confit, roasted pineapple and lime yoghurt in the heart. Original, fresh, not too sweet. Initially, I wanted to eat with cutlery but the best way to enjoy this dessert is to bite into it !

The team of the “Bastards” and Moulaye are very welcoming. You will be greeted by the famous dimples of Dimples Man and his communicative smile !
