It’s apple season and I wanted to bake Donna Hay’s apple cake. Fluffy to perfection, not too sweet…It’s the perfect little treat easy and quick to prepare! My guests have all enjoyed this dessert.
Donna Hay Apple Cake: the recipe
180g soft butter
150g caster sugar
The pulp of a vanilla bean
220 g flour + 1 teaspoon baking powder
80 ml of milk (I used almond milk)
4 small apples
Preheat the oven to 160°C.
Grease and flour a square or rectangle mold.
Whisk the butter with the sugar and the vanilla pulp. Stir in the eggs one by one, then the flour and the milk, mix well.
Pour the dough into the mold and place the apple quarters (peeled and cored) on which you will make cuts on the back.
Bake for 1 hour. The cake must be just golden.
Optional: sprinkle some flaked almonds and sprinkle with icing sugar.
